Creamy White Bean Chicken Enchilada Soup Recipe using Chicken Enchilada Dry Soup Mix

Directions:
1 Package of Chicken Enchilada Dry Soup Mix
4 cups water, 2 cups milk or half’n’half
1 can (6 oz.) Tomato Paste
Whisk soup mix into water, milk and tomato paste
1 - 2 (10 oz.) cans chicken or cooked chicken
Bring to boil, stirring often
Reduce heat and simmer for 10 minutes

Variations: 1/2 cup to 1 cup grated cheddar cheese
and 1/2 cup crushed tortilla chips. Top with Sour Cream.

Amazing flavor!

I had this soup while I was sick for a week and it is packed with flavor! Mine was in the old packaging and I just stopped by to buy a few more. I hope they haven't changed the recipe. I added some diced up chicken and used chicken broth instead of water.
