This inspiration comes from my love for enchiladas! Sometimes I just don't feel like making enchiladas. This is how I cheat when I want a flavorful, nourishing soup with proteins. This is super fast and soup's one in about 30 minutes.

Ingredients

1 package Twisted Pepper Co. Chicken Enchilada Soup Mix
2.5 cups milk
4 cups water
1 can (6oz.) tomato paste
1 (10oz) can chicken or rotisserie chicken, 2 cans cannellini white beans, 1
2 cans cannellini white beans,
1 package (8 oz.) cream cheese

Directions

Combine all ingredients in stock pot (except cream cheese) and bring to boil, stirring often. Reduce heat and simmer for 10 to 20 minutes. then add cream cheese, stir until it melts. For thicker soup, add crushed tortilla chips.

Recipe Note

Transform your bowl of soup into your own creation by adding your favorites like, corn, green chilies, fresh lime, fresh diced cilantro or veggies. Be creative and make it your way! Don't like white beans, try chickpeas
