Directions for Ham & Bean Soup
1 Package of Ham & Bean Soup Mix 1 pound dry great Northern beans 8+ cups water 1 ham hock 2 cups chopped ham 4 potatoes, pealed and sliced
Rinse beans in cold running water and sort to remove any stones or debris, or split beans. Wash several times. Cover the beans with water in a large stock pot. Bring to a boil, reduce heat and simmer for 3 to 5 minutes. Remove from heat, cover, and let stand 1 to 2 hours. OR soak beans overnight in a covered pan, do not drain. Bring beans and water to boiling. Add a large meaty ham bone or ham hocks, soup mix, sliced potatoes. Reduce heat, cover, and simmer over very low heat for 1 hour or until the beans are nearly tender. Remove bone or ham hocks.
When the ham is cool enough to handle, remove any remaining meat from bones and chop and add to soup. Add additional 2 cups chopped ham.
