Dry Rub: Press and rub both sides of the meat with a generous amount of rub. The longer the meat is allowed to absorb the rub the greater the flavor. Grill, Smoke, Bake or Broil to your perfection
To enhance the flavor, as well as increase the tenderness of the meat, apply to both sides of the meat the marinade recipe listed below, and allow to stand refrigerated for at least two hours. Remove the meat from the marinade and coat both sides with the dry rub. Allow to stand for 20 minutes and then Grill, Smoke, or bake to your perfection.
Marinade: 2 Tbsps. Peppercorn Chile Rub, 1/4 cup Worcestershire Sauce, 1/4 cup Soy Sauce Lite, and 1/4 cup Beer or Wine, or Coffee, etc., Mix together and pour on both sides of beef or fish.
