Directions:
1 Package of Butternut Squash Soup Mix
4 cups water,
2 cups milk, or Half & Half
1 (10 oz.) bag frozen chopped Butternut Squash
OR cooked fresh Butternut Squash - peeled, seeded, and cubed (2 cups)
Whisk soup mix into water, milk, and squash
Bring to boil, stirring often
Reduce heat and simmer for 20-30 minutes
Variations: Use Coconut Milk instead of milk and add curry powder & honey to taste. Add Siracha to taste
Add a Spices: Ginger or Rosemary or Sage
Garnish with parsley and bacon bits.
