I love this recipe!
The first time I had Tinga chicken was at a California restaurant and it was on their breakfast menu. I was craving Huevos Rancheros. They had called it something different, it was close to what I was craving. I had to go home and make it with my Taco Seasonings. I think it was even more cravable.

Ingredients

1 Twisted Pepper Co. Taco Seasonomg 5oz Jar

4 Tbsps. Taco Seasoning

2 Tbsps. Oil

2 garlic cloves, chopped

1 tsp cumin
-
1 can fire roasted tomatoes (14 oz.) slightly blended

½ c chicken stock
-
4 Chipotles in adobe sauce - chopped or 1 Tbsp. chipotle powder
Directions
Combine in sauce pan and simmer for 10 to 15 minutes.
Add shredded chicken and simmer for about 10 minutes
Ready to serve on Huevos rancheros, taco, burritos, etc.

I have only suggested a few ways to serve this delicious, zesty Tinga Chicken. I say, however you like!
Just make it happen! The restaurant served it like this: Served the Tinga Chicken on top of red tortilla chips, topped it with 2 eggs over medium and salsa, cheese, and jalapenos. Yes I ate every bite and loved it!
