Healthy and flavorful Vegetable Tortellini Soup that's packed with carrots, tomatoes, and spinach with tender cheese tortellini's. It's quick and easy and so delectable.

Ingredients

1 Twisted Pepper Vegetable Beef Soup Mix

6 cups water
-
1 can (15.25 oz.) diced tomatoes

3 carrots, peeled, halved sidewise and sliced

1 9oz. packaged cheese filled tortellini

1 shall bunch escarole or 5 cups of spinach, roughly chopped
-
3 Tbsp. grated parmesan cheese, whole-wheat baguette for serving
Directions
Add to large pot 1 package of Twisted Pepper Vegetable Soup Mix, water, tomatoes, carrots, tomatoes
Bring to boil, stirring often, cover and simmer for 20 minutes
Bring to another boil, add tortellini, reduce heat to medium. Cook until tender (refer to the label as to cooking time for tortellini)
Add the escarole or spinach to the soup and cook until wilted.
Ladle the soup into bowls and sprinkle with cheese, serve with bread
