Coffee-Crusted Prime Rib
COFFEE-CRUSTED PRIME RIB
3 Tbsp. Coffee Rub by Twisted Pepper Co.
1/3 cup finely ground coffee
1 12 pound, bone-in prime rib roast (5 bones)
3 Tbsp. Coffee Rub by Twisted Pepper Co.
1/3 cup finely ground coffee
1 12 pound, bone-in prime rib roast (5 bones)
1. In a bowl combine 3 Tbsp. + Peppercorn Chile Rub and Coffee. Rub seasoning all over prime rib. Turn the roast bone done and let stand at room temperature for 30 minutes.
2. Preheat oven to 450 degrees or Smoker and roast for 15 minutes, turn down to 325 degrees and roast for 2 1/2 hours, until temperature registers 125 degrees for medium-rare.
3. Transfer the roast to a carving board and let rest for 20 minutes. Scrape off any excess coffee rub. Carve the meat in 1/2" thick slices and serve.
